This was actually one of the dishes I loved to make when I was in college. This recipe is perfect for someone who wants a quick meal. It also works great for weekly meal planning. It does not require too many ingredients, is healthy and well balanced.

So, let’s get into it. This Pineapple Chicken stir-fry is perfect for a cozy, warm meal that pairs beautifully with hot rice or noodles. The combination of juicy pineapple, tender chicken, and a delicious sauce made from soy sauce, chili, and honey or brown sugar will satisfy your taste buds and have you coming back for more!

Ingredients:
- 2 boneless chicken breasts, diced
- 1 cup fresh pineapple cut into chunks
- 2 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1-2 tsp chilli flakes or cayenne chilli powder (adjust to taste)
- 1 chicken bouillon cube
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Hot rice or noodles to serve
Instructions:
- Heat olive oil in a large skillet or wok over medium heat. Add diced chicken, seasoning with the chicken bouillon. Cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
- In the same skillet, add the garlic and onion. Cook until fragrant and light brown. Add the yellow and red bell peppers and stir-fry until slightly softened.
- Add pineapple chunks and move it around for another 2 minutes.
- Return the cooked chicken to the skillet. Add soy sauce, honey/brown sugar, and chilli flakes/cayenne pepper. Stir well to coat everything in the sauce. Let it simmer for 2-3 minutes for the flavours to blend.
- Serve immediately over hot sticky white rice or noodles.
